Sesame Green Bean Salad

Ingredients

¼ cup low-sodium soy sauce
2 tbsp oriental sesame oil
2 tablespoon low-sodium chicken stock
2 tsp sesame seeds
1/4 tsp ground ginger
3 drop hot pepper sauce
32 oz frozen green beans
8 oz water chestnuts, sliced
½ whole sweet red pepper, seeded and julienned
¼ cup Scallions, thinly sliced

Preparation

To prepare the dressing: In a medium bowl, combine the soy sauce, oil, broth, sesame seeds, ginger and hot-pepper sauce. Stir to mix well. Set aside.

To prepare the salad: Cook the beans according to the package directions. Place them in a colander and cool slightly under cold running water. Drain well.

Add the water chestnuts, peppers and scallions to the bowl with the dressing. Add the beans and stir to coat with the dressing. Cover and refrigerate for 6 to 8 hours before serving.
